Total: 1hr 35min ) I usually do half recipe) Ingredient: - 3 cups warm water (Half = 1.5 cups) - 4 Tbsp dry active yeast (45g -typical 2 1/4 tsp packet is 7g) (Half = 22.5g) - 1/4 cup granulated sugar (60g) (Half = 30g) - 1/3 cup oil (66g or 16 tsp) (Half = 1/6cup or 8 tsp = 33g) - 1 Tbsp salt (20g) (Half = 10g) - 2 eggs (Half = 1 egg) - 1/3 cup instant mashed potato flakes** (30g optional - did not use) - 7 1/2 cups bread flour (1140g) (Half = 570g) Italian Herb Seasoning: - 1 Tbsp oregano - 2 Tbsp garlic powder - 1 Tbsp dried parsley - 2 Tbsp parmesan cheese Instructions: 1) In the bowl of a stand mixer whisk together the yeast and water. 2) Whisk in the sugar, oil, salt, eggs, and the mashed potato flakes if using. 3) Add the flour and knead with dough hook for 6 minutes over low speed. 4) Rest the dough for 10 minutes. 5) Transfer dough onto a floured surface and cut into 4 equal pieces. Cut each piece in half again to make a total of 8 pieces. 6) Gently pat and roll into a 12-inch log. I smashed slightly to make wide vs completely round (probably not needed if using the roll mat) 7) Spray the tops with water. I got hands wet and lightly splashed/rubbed thin layer of water 8) Dredge into the Italian Herb Blend. I shook on and rubbed to smooth any chunks 9) Place rolls onto Silicone Sub Roll Mats and score the tops (3-4 slashes.) (or simply place on cookie sheet and score) 10) Allow dough to rise uncovered until tripled in size (up to 1 hour if rising in a warm place.) 11) Sprinkle the tops with shredded Colby and Monterey Jack Cheese. 12) Bake for 15-18 minutes at 375F.
